
Sardine Pasta
Sardines are one of the highest sources of omega 3 on the planet,
as well as being rich in calcium, vitamin D ad B12. One can of sardines provides a whopping 338% of your daily Vitamin B12 needs; essential for energy, mood and brain function.
Ingredients
- Serves 2
- 1 can of sardines
- 1 x 400g tin of organic tomatoes (or 5 large fresh tomatoes)
- 1 tbsp capers
- 2 cloves of garlic
- 1 onion, peeled and finely chopped
- Good glug of olive oil
- 2 tbsp bone broth (optional)
- 1 tbsp tomato puree (optional)
- salt and pepper
- Parsley to serve
Method
Cook the onion long and slow in a generous amount of olive oil (5-7 minutes) cook the garlic for a further minute before adding the tomatoes and sardines. Simmer for 10 minutes before adding the capers and bone broth and tomato puree if you’re using. Continue to simmer while you cook the pasta. Serve topped with parsley.
