
Paleo Banana Muffins With Raw Cacao and Walnuts
Forget Starbucks. Take these to work for an instant pick me-up. The raw cacao and walnuts will help lower your stress levels naturally, the honey will feed the good bacteria in your gut and the banana (high in tryptophan) will boost your mood. Yum!
Ingredients
- 2 Ripe bananas
- 1 1/2 cups ground hazelnuts
- 1 tsp baking soda (choose an aluminium-free brand like Bob's Red Mill)
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp vanilla
- Pinch of salt
- 2 eggs, whisked
- 1/4 cup coconut oil, melted (plus extra for greasing tins)
- 1/3 cup activated walnuts, chopped
- 1 0r 2 tbs raw honey
- 1 tablespoon of raw cacao
Method
In a small bowl smash the bananas (you can use a potato masher)
Next add the eggs, vanilla, coconut oil and honey to the bananas and stir until combined.
In a larger bowlcombine all the dry ingredients (ground hazelnuts, baking soda, baking powder, cacao, salt and cinnamon). Pour the wet ingredients into the dry mixture bowl and stir to combine.
Next add the chopped nuts and stir well (save a couple of tablespoons of the nuts to top the muffins). Pour batter into a muffin tin greased with additional coconut oil– fill each cup about 3/4 full – and bake at 180º C for about 20-25 minutes. You can test the crumbliness by inserting a toothpick, if it comes out clean, they’re done.
Sprinkle the remaining nuts on top of the muffins and enjoy!
