Wild Mushroom & Millet Risotto

‘I made this recipe for a great friend Melanie C – she told me that one of her favourite things to eat was a mushroom risotto but that she would love to discover a healthier way to cook it. Chia seeds in this recipe act as the binder, they really make the thickness of the loaf and add to the bountiful amounts of goodness a slice of this bread delivers.’

‘Curcumin, the active ingredient in turmeric, is considered to be a potent antioxidant and antiseptic in Eastern and Western medicine, and adding black pepper enhances these healing properties. It has numerous medicinal benefits, some of which include being a stomach soother, a powerful anti-inflammatory, a natural antiseptic for wounds and a liver cleanser. Warm milk with turmeric and honey is deliciously creamy, mildly spicy, and perfectly soothing.’
